Our philosophy is mainly based on the concept of providing the consumer with the highest quality in terms of practicality while maintaining the organoleptic, nutritional and gustatory qualities of the product over time. To comply with this philosophy, we adopt 5 fundamental steps:

Research, selection and acquisition of meat produced in the best Italian farms while maintaining, where possible, the predisposition to promote local products.

Subsequently the meats are processed according to particular preparation techniques (trimming, rubbing, marinade etc.) and then cooked according to true barbeque methods, i.e. low & slow, smoking, as well as searing and reverse searing.

Once the ideal cooking temperatures have been reached, the meats are cooled through the use of a blast chiller in order to promptly stop any deterioration process.

Once refrigerated (not frozen), the meat is portioned and vacuum packaged in order to guarantee the continuation of the quality, maintaining the characteristics that distinguish it unchanged.

After delivery, the buyer will be able to choose to consume the meat immediately or within the expiry times indicated, as well as, if he wishes, proceed with freezing it.
