The Pizzeria Sciuè Sciuè managed by Roberto Contrastato (Neapolitan DOC) and his sons Manuel and Ivan Contrastato, are part of the new generation of Neapolitan pizza makers who combine modernity and ancient wisdom. Their pizza is light and highly digestible, soft with a little crunchiness, made with stone-ground flour and leavened for 36 hours to ensure high hydration and a very low amount of salt.
